Vegan Pumpkin Donuts

Serves 12


  • 1 3/4 cup whole grain spelt flour
  • 2 tsp baking soda
  • 1/2 tsp Real Salt
  • 1/2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp allspice
  • 1/8 tsp ground cloves
  • 1/3 cup unsweetened applesauce
  • 3/4 cup pumpkin puree
  • 1/2 cup coconut sugar
  • 1 tsp vanilla
  • 1 Tbsp ground flaxseed
  • 1/4 cup pure maple syrup
  • 1/4 cup almond milk (or non-dairy milk of choice)
  • 1 handful of Kettle Corn PopCorners


Preheat oven to 350 F degrees. Combine the dry ingredients in a large bowl (flour, baking soda, salt, and spices). Once combined, add the remaining ingredients to the dry ingredients and mix well.

Spoon into a well-greased donut pan (or a mini muffin tin to make donut holes!). Bake 15-20 minutes or until toothpick comes out clean.

Remove from oven and allow to cool slightly. Once cool enough to handle, remove from donut pan and coat with your favorite dairy-free frosting. Then crumble Kettle Corn PopCorners to give these donuts a crunch you won't be able to resist!
