• ½ cup chipotle mayonnaise
  • ½ cup plain Greek yogurt or sour cream
  • 1 tablespoon lime juice
  • 2 minced scallions
  • ½ cup crushed Cheesy Jalapeno White Cheddar PopCorners
  • ½ cup grated Parmesan cheese
  • 4 ears corn, shucked


In a small bowl, stir together the mayonnaise, sour cream, lime juice and scallions. In a separate bowl, stir together the Popcorners and Parmesan cheese.

Grill the corn - or scorch it in a cast iron pan - on all sides.

Spread the corn all over with the mayonnaise mixture. Working over a sheetpan, sprinkle the corn with the Popcorners mixture. Serve right away.
