Edamame Hummus

Makes about 2 ½ cups
A fresh take on a beloved standard, Edamame Hummus is a gorgeous bright green, is a tasty surprise, and has all the complexly nuanced flavors of classic hummus.


  • 1 16-ounce package frozen shelled edamame, thawed
  • 1/4 cup fresh lemon juice
  • 3 tablespoons tahini
  • 2 cloves garlic, peeled, trimmed and smashed
  • ¼ cup extra-virgin olive oil, plus more for drizzling
  • Water, ¼ - ½ cup
  • Salt to taste


Sweet Heat Chili Popcorners, for dipping

Put all ingredients except the water into the bowl of a food processor. Process until smooth, scraping down the sides of the bowl occasionally.

Add water, bit by bit, until the hummus reaches a consistency that pleases you.

Transfer to a serving bowl, drizzle with olive oil and serve with Popcorners for dipping!
