TACO SALAD

  1. Cook taco meat with taco seasoning and avoid the processed ingredients if possible. Going meatless – no problem. Simply sauté thicker veggie cuts of green peppers, sweet onions and zucchini in place of ground beef.
  2. Beans or rice? How about both? On separate burners, heat black beans and/or a Spanish-style rice to spice-up your tacos.
  3. While you let heated ingredients cool before refrigerating, plus-up your taco salad with top-notch toppings options like: Tomatoes, corn, avocado, lettuce and/or spinach, Mexican cheese blend, or if you're avoiding dairy, shredded carrots make a great, better-for-you replacement.

HONEY SRIRACHA GLAZED MEATBALLS

  1. Preheat oven to 375 degrees Fahrenheit.
  2. In a large bowl, mix together turkey, breadcrumbs, eggs, green onions, garlic powder and salt/pepper until well combined. Shape mixture into 1½-inch balls (you'll make roughly 40 balls) and place spaced apart on prepared baking sheets lightly sprayed with cooking spray.
  3. Bake meatballs for 20 to 25 minutes, or until browned and cooked through.
  4. While the meatballs are baking, combine all the ingredients for the sauce in a small saucepan and bring to a boil over medium heat, whisking continuously. Reduce heat and simmer for 8 to 10 minutes (the sauce will start to thicken) then toss with the meatballs.
  5. Let cool before refrigerating.
  6. To take your meatball masterpiece to the next level, enjoy over a bed of brown rice, topped with green onions, then finish it all off with a few sesame seeds. Lastly, avoid free-sample requests from coworkers by having recipe copies available on demand.

SPICY CARROT & HUMMUS SANDWICH

  1. In skillet heat oil on medium, add the carrots, garlic, caraway seeds and season with salt and red pepper. Cook until carrots have softened, about 4 minutes. Let cool before refrigerating.
  2. Pack a few healthy slices of bread to toast and layer with hummus. When ready, add reheated carrot mixture, top with cilantro and season with black pepper, then enjoy.
