- 16 Salt of the Earth Bean Crisps
- 16 thin slices English cucumber
- 3 tablespoons sour cream
- 16 bite-size pieces smoked salmon
- Freshly ground black pepper
- 1 lemon, zested
Spread the Bean Crisps out on a serving plate. Top each with a slice of cucumber. Use a pastry bag or small spoon to top each with a dollop of sour cream. Put a piece of salmon onto each dollop, sprinkle with pepper and lemon zest.
Serve immediately and watch them disappear!
